The slow cooker does the work; the noodles go in at the very end so\nthey keep their bite.</p>\n\n<div class=\"recipe-meta\">\n  <span><strong>Serves</strong> 6</span> &middot;\n  <span><strong>Slow cooker</strong> 6&ndash;7 hrs low / 3&ndash;4 hrs high</span> &middot;\n  <span><strong>Hands on</strong> about 15 minutes</span>\n</div>\n\n<h2>Ingredients</h2>\n<ul class=\"recipe-ingredients\">\n  <li>1 tbsp olive oil</li>\n  <li>1 cup onion, diced</li>\n  <li>2 tsp garlic, minced</li>\n  <li>1 lb Italian sausage</li>\n  <li>32 oz chicken stock</li>\n  <li>30 oz diced tomatoes</li>\n  <li>6 oz tomato paste</li>\n  <li>1 tsp oregano</li>\n  <li>&frac12; tsp Italian seasoning</li>\n  <li>8 lasagna noodles, broken into pieces</li>\n  <li>3 tbsp basil, chopped</li>\n  <li>&frac14; cup Parmesan cheese, grated</li>\n  <li>1 cup mozzarella cheese, shredded</li>\n  <li>Salt and pepper</li>\n</ul>\n\n<h3>To finish</h3>\n<ul class=\"recipe-ingredients\">\n  <li>Ricotta cheese</li>\n  <li>Fresh basil</li>\n</ul>\n\n<h2>Method</h2>\n<ol class=\"recipe-method\">\n  <li><strong>Brown the sausage.</strong> Heat the olive oil in a skillet over\n      medium-high. Break up the sausage and cook until no pink remains, about\n      6&ndash;8 minutes. Drain off the fat.</li>\n  <li><strong>Soften the aromatics.</strong> Add the onion to the same pan and\n      cook 3&ndash;4 minutes until translucent, then the garlic for one minute\n      more &mdash; just until it smells sweet, not browned.</li>\n  <li><strong>Into the crockpot.</strong> Tip in the sausage mixture with the\n      stock, diced tomatoes, tomato paste, oregano and Italian seasoning.\n      Stir until the paste has dissolved. Season with salt and pepper.</li>\n  <li><strong>Cook.</strong> Low for 6&ndash;7 hours, or high for\n      3&ndash;4.</li>\n  <li><strong>Noodles last.</strong> Break the lasagna sheets into rough\n      pieces and stir them in for the final 20&ndash;30 minutes on high, until\n      just tender. Adding them earlier turns them to mush and thickens the\n      soup into a stew.</li>\n  <li><strong>Off the heat.</strong> Stir through the chopped basil, Parmesan\n      and mozzarella until melted. Doing this with the cooker switched off\n      keeps the cheese smooth instead of stringy or split.</li>\n  <li><strong>Serve.</strong> Ladle into bowls, add a spoonful of ricotta on\n      top and scatter with fresh basil.</li>\n</ol>\n\n<h2>Notes</h2>\n<ul>\n  <li>Hot Italian sausage gives it a proper kick; sweet keeps it family\n      friendly.</li>\n  <li>The soup thickens overnight &mdash; loosen leftovers with a splash of\n      stock when reheating.</li>\n  <li>Freezing?
